Beets & Goat Cheese Salad

Beets & Goat Cheese Salad 

Ingredients

2lb.  fresh beets, tops removed* 
2oranges, peeled and sectioned* 
1/2small  red onion, thinly sliced 
40sprays  Wish-Bone® Salad Spritzers® Raspberry Bliss Vinaigrette Dressing  
4cups  mixed salad greens 
1pkg.  (4 oz.) goat cheese, crumbled 
1/3cup  chopped walnuts 

Directions

In 4-quart saucepot cover beets with water and bring to a boil over high heat. Reduce heat and simmer 30 minutes or until tender; drain and cool. Peel and cube beets.
In large bowl combine beets, oranges, and onion. Spritz with Wish-Bone® Salad Spritzers® Raspberry Bliss Vinaigrette Dressing and gently toss to coat.
On large serving platter arrange salad greens. Top with beet mixture, then cheese and walnuts. Just before serving spritz, if desired, with additional dressing.
*SUBSTITUTION: Use 2 cans (14.5 oz. ea.) sliced beets, drained and coarsely chopped, and 1 can (11 oz.) mandarin oranges, drained, instead fresh beets and oranges.
