Mediterranean Vegetable Bruschetta

Mediterranean Vegetable Bruschetta 

Ingredients

4tbsp.  Promise® Buttery Spread, divided 
1-1/2tsp.  Lawry's® Garlic Powder With Parsley  
1loaf  (16-in.) seeded whole wheat baguette, cut into 1/2-inch slices 
1small  onion, finely chopped 
1large  zucchini, diced 
1medium  tomato, diced 
1/4tsp.  salt 
2tbsp.  grated Parmesan cheese 
2tbsp.  loosely packed fresh basil leaves, thinly sliced 

Directions

Preheat oven to 350°. In small microwave-safe bowl or glass measuring cup microwave 3 tablespoons Promise® Buttery Spread and garlic powder at HIGH 20 seconds or until melted. Evenly brush onto one side of each bread slice. On baking sheet arrange bread slices. Bake 7 minutes or until toasted; set aside.
In 10-inch nonstick skillet melt remaining 1 tablespoon spread over medium-high heat and cook onion and zucchini, stirring occasionally, 6 minutes or until tender. Stir in tomato and salt. Cook, stirring occasionally, 3 minutes or until tomatoes are tender. Remove from heat and stir in cheese and basil.
To serve evenly top each bread slice with 1 tablespoon vegetable mixture.
