Directions
In 4-quart saucepan bring Knorr® Sides Plus™ Veggies - Southwestern Style Rice, broth, water, and carrots to a boil over high heat. Reduce heat to low and simmer covered 12 minutes or until rice is tender. Stir in chicken and tomatoes. Simmer 2 minutes or until heated through.
Just before serving stir in tortilla chips and lime juice. Serve, if desired, with additional tortilla chips, reduced fat sour cream, lime wedges, and reduced fat shredded cheddar cheese.
