Chicken Alfredo Primavera

Chicken Alfredo Primavera 

Ingredients

1lb.  boneless, skinless chicken breasts, cut into small cubes 
Juice of 1 lemon 
2tbsp.  Shedd's Spread Country Crock® Spread  
2cups  thinly sliced vegetables (such as zucchini, carrots, bell peppers or mushrooms)* 
1pkg.  Knorr® Alfredo Pasta Sides made with Whole Grains  
1-1/2cups  water 
1/2cup  milk 

Directions

Toss chicken with lemon juice. In 12-inch skillet, melt spread over medium-high heat and brown chicken. Remove and set aside.
In same skillet add vegetables and cook, stirring frequently, 2 minutes. Stir in Knorr® Alfredo Pasta Sides made with Whole Grains, water, and milk. Bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 8 minutes. Stir in reserved chicken and continue simmering 2 minutes or until noodles are tender and chicken is thoroughly cooked. Serve, if desired, with grated Parmesan cheese and cracked black pepper.
*Need to save some time? Feel free to substitute your favorite frozen vegetables or vegetable blend.
