Preheat oven to 400°F. Coat baking pan with nonstick cooking spray; set aside. Cut slit down side of salmon almost all the way through, but leaving one side intact, forming a pocket.
Heat oil in large sauté pan over medium-high heat. Add onion; sauté 3 minutes or until lightly browned. Add walnuts; sauté 1 minute. Add spinach; sauté 1 minute. Add breadcrumbs; season with nutmeg, and salt and pepper to taste. Cool 10 minutes in refrigerator. Fill pocket in salmon with stuffing.
Mix together mustard and honey; brush mixture over salmon. Place salmon on baking pan; bake 40 minutes or until fish flakes with fork.
