Preheat oven to 325°F. In large skillet, cook broccoli, squash, onion and carrots in oil over medium-high heat 5 to 7 minutes or until crisp-tender. In small bowl, stir together mayonnaise and 1/2 cup of the cheese; stir into vegetables. Turn vegetable mixture into lightly greased 2-quart casserole dish.
In small bowl, stir together breadcrumbs, paprika, salt, pepper and remaining 1/2 cup cheese; sprinkle over vegetables. Bake 20 to 30 minutes or until light brown.
