Turkey-Sweet Potato Skillet

Ingredients

1sweet potato, peeled and diced 
3tbsp.  butter, divided 
1onion, chopped 
1red bell pepper, seeded and chopped 
1 1/2cups  chopped cooked turkey 
1/4tsp.  salt 
1/4tsp.  pepper 
4eggs 
1/4cup  chopped fresh parsley 

Directions

Place diced potato in a saucepan; add water to cover 1 inch. Bring to boiling and cook 3 to 5 minutes or until crisp-tender. Drain and set aside
Heat 2 tablespoons butter in skillet over medium heat. Add onion and red pepper and cook over medium heat 5 minutes or until tender. Add sweet potatoes and cook 5 to 10 minutes or until potatoes are crispy. Add turkey, salt and pepper; cook 1 minute more
In separate skillet, fry eggs in remaining butter until desired degree of doneness. Top turkey mixture with fried eggs. Sprinkle with parsley and serve immediately.
