Preheat broiler. Toast bread slices; arrange on 15x10x1-inch baking pan. Top toasted bread evenly with turkey.
In heavy saucepan, melt butter and whisk in flour. Stir until thickened and bubbly, about 2 minutes. Whisk in milk and cook over medium heat, stirring constantly, 2 minutes.
Add Parmesan cheese and cook 5 to 10 minutes more or until thickened. Spoon cheese sauce evenly over turkey and top with 2 slices bacon; sprinkle with additional Parmesan, if desired. Broil 3 inches from heat until lightly browned, about 2 minutes.
