Turkey and Black Bean Salad

Turkey and Black Bean Salad

Ingredients

12oz.  ground turkey or chicken 
115-oz.  can black beans, rinsed and drained 
1cup  chunky salsa, divided 
1/2cup  dairy sour cream 
4cups  tortilla chips, slightly crushed, or 4 taco salad shells 
112-oz.  bag mixed salad greens 
1cup  shredded taco cheese or Cheddar cheese (4 oz.) 
Chopped tomato, avocado slices and/or sliced ripe olives (optional) 

Directions

In skillet brown turkey, stirring to break up. Drain fat. Stir in beans and 1/3 cup of the salsa. Cook and stir until heated through.
For creamy salsa dressing, stir together remaining 2/3 cup salsa and sour cream. Line 4 dinner plates with tortilla chips.
Top with greens, meat mixture and cheese. Garnish with tomato, avocado and olives, if desired. Spoon dressing over salads.
