Triple-Decker Snack Stacks

Ingredients

1/4lb.  smoked chicken salad (1/2 cup) 
2tbsp.  finely chopped apple 
1tbsp.  sliced almonds, chopped 
1tbsp.  sliced green onion 
1/4lb.  ham salad (1/2 cup) 
1tbsp.  finely chopped green bell pepper 
1/4cup  shredded smoked Swiss cheese 
1/4lb.  tuna salad (1/2 cup) 
1tbsp.  chopped celery 
1tbsp.  chopped red bell pepper 
6slices whole-wheat sandwich bread 
6slices white sandwich bread 
Lettuce leaves, torn into small pieces 
Radishes, trimmed and thinly sliced (optional) 

Directions

In small bowl mix together chicken salad, apple, almonds and green onion; set aside.
In separate small bowl mix together ham salad, green bell pepper and Swiss cheese; set aside.
In another small bowl mix together tuna salad, celery and red bell pepper; set aside.
Using a small round cookie cutter, cut 4 circles out of each slice of bread.
Create the triple-decker chicken salad sandwich bites by spreading a little of the chicken mixture on 2 of the bread rounds. Top each with a little lettuce. Stack those 2 bread rounds together with spread facing up; close sandwich with a plain bread round.
Garnish top with a slice of radish, if desired; secure with toothpick. Repeat with remaining chicken mixture and the other spreads. Serve immediately or cover and chill until ready to serve.
