Tomato Basil Pizza from the Grill

Ingredients

1large firm tomato, cut into 1/2-inch thick slices 
2tbsp.  extra virgin olive oil 
1clove garlic, minced 
112-inch prebaked pizza crust 
1cup  shredded mozzarella cheese, divided 
3tbsp.  thin strips fresh basil, divided 
2tbsp.  shredded Parmesan cheese 
Crushed red pepper flakes (optional) 

Directions

Coat grill rack with nonstick cooking spray. Preheat grill to medium direct heat. Blend olive oil and garlic in small bowl. Brush tomato lightly with oil. Place tomato on grill. Grill, covered, 2 to 3 minutes per side to lightly char. Remove to platter; leave grill on.
Brush pizza crust with remaining oil mixture. Sprinkle with 1/2 cup of the mozzarella cheese and 2 tablespoons of the basil. Top with grilled tomato slices. Sprinkle with remaining 1/2 cup mozzarella and Parmesan.
Place pizza directly on grill (or on sheet of heavy-duty foil lightly sprayed with nonstick cooking spray). Grill, covered, 7 to 9 minutes or until bottom of crust is evenly browned, topping is hot and cheese is melted, rotating once if necessary to cook crust evenly. Remove from grill. Sprinkle with remaining 1 tablespoon basil. Serve with additional Parmesan cheese and crushed red pepper flakes, if desired.
