Tomato and Asiago Bruschetta

Tomato and Asiago Bruschetta

Ingredients

1shallot, minced 
1large Roma tomato, cored and finely diced (1 cup) 
1roasted red pepper, drained and finely diced (about 1/2 cup) 
1tsp.  capers 
2tsp.  olive oil 
41/2-inch thick  slices Italian bread, toasted 
1/2cup  shredded Asiago cheese 

Directions

Preheat broiler. Combine shallot, tomato, red pepper, capers, and olive oil in medium bowl. Divide among tops of bread slices. Sprinkle 2 tablespoons cheese over each.
Place on baking sheet. Place under broiler, 4 inches from heat; broil 1 to 2 minutes or until cheese melts.
