Directions
Preheat broiler. Combine shallot, tomato, red pepper, capers, and olive oil in medium bowl. Divide among tops of bread slices. Sprinkle 2 tablespoons cheese over each.
Place on baking sheet. Place under broiler, 4 inches from heat; broil 1 to 2 minutes or until cheese melts.
