Sweet Lemon Dip and Fresh Fruit

Ingredients

36-oz.  containers custard-style vanilla yogurt 
2tsp.  grated lemon peel 
2tbsp.  fresh lemon juice 
1/4cup  packed light brown sugar, divided 
2navel oranges, peeled 
2star fruit, sliced and quartered 
2cups  cubed fresh pineapple, cut into 1-inch cubes 
116-oz.  container fresh strawberries, hulled and quartered 
1pt.  fresh blueberries 
Additional lemon peel, blueberries and strawberries (optional) 

Directions

Mix yogurt, lemon peel, lemon juice and 2 tablespoons of the brown sugar, stirring until sugar is dissolved.
Divide oranges into segments; cut segments into bite-size pieces. Place in bowl. Add remaining 2 tablespoons brown sugar, star fruit, pineapple, strawberries and blueberries, tossing gently.
Layer one-third of fruit evenly into 8 parfait glasses. Top with one-third of yogurt mixture. Repeat layers twice with remaining fruit and yogurt. Garnish evenly with additional twists of lemon peel, blueberries and strawberries, if desired.
