Spicy Jamaican Jerk Chicken

Spicy Jamaican Jerk Chicken

Ingredients

2fresh habanero or Scotch bonnet peppers, stemmed and seeded** 
2tbsp.  ground allspice 
2tbsp.  lime juice 
2green onions, thinly sliced 
3/4tsp.  ground cinnamon 
3/4tsp.  ground nutmeg 
4boneless chicken breast halves (1 lb. total) 
2tsp.  vegetable oil 

Directions

In blender or food processor bowl, purée first 6 ingredients to make a thick paste.
Wearing rubber gloves, rub paste all over chicken. Let chicken stand at room temperature 15 minutes.
Heat oil in large nonstick skillet over medium-high heat.
Brown chicken on each side 2 minutes.
Reduce heat and cook 8 to 10 minutes more or until tender and no longer pink (170°F).

**Use caution when handling hot peppers. Wear disposable gloves or wash hands thoroughly in hot, soapy water.
