Spice-Roasted Edamame

Spice-Roasted Edamame

Ingredients

1(1-lb.)  bag frozen shelled edamame (about 3 cups) 
2tbsp.  olive oil 
2tsp.  kosher salt 
1tsp.  chili powder 
1/4tsp.  crushed red pepper flakes 
1/2tsp.  dried oregano leaves 
1/2tsp.  minced garlic 
1/4tsp.  ground cumin 

Directions

Preheat oven to 375°F. In large bowl, combine edamame with oil, salt, chili powder, red pepper flakes, oregano, minced garlic and cumin. Toss to coat.
Arrange edamame mixture in single layer on shallow baking sheet. Roast uncovered 30 to 35 minutes, stirring once, until the beans begin to brown slightly. Remove from oven and serve hot or cooled.
