Sirloin Steak Stuffed with Garlic and Fresh Herbs

Ingredients

2cloves garlic, minced 
1tbsp.  olive oil 
1/3cup  chopped fresh parsley 
1/3cup  sliced green onions 
1tbsp.  Italian-style breadcrumbs 
1tsp.  chopped fresh basil leaves (optional) 
12-lb.  boneless sirloin steak, 1 inch thick 
1tsp.  olive oil 
1/2tsp.  freshly ground pepper 

Directions

Prepare grill for direct grilling. Heat grill to medium direct heat. Meanwhile, in small saucepan cook garlic in 1 tablespoon olive oil over medium heat until hot but not browned. Remove from heat; stir in parsley, green onions, breadcrumbs and basil, if desired. Set aside.
With sharp knife, cut horizontally into, but not through, steak to form pocket. Fill pocket with parsley mixture. Brush steak with 1 teaspoon olive oil; sprinkle with pepper.
Place steak on grill. Grill, covered, 5 to 8 minutes per side or to desired doneness. Cut into serving pieces.
