Simple Sweet and Sour Carrots

Ingredients

11-lb.  pkg. carrots, cleaned and sliced 
1/4cup  red wine vinegar or cider vinegar 
1/4cup  brown sugar 
1tbsp.  butter or margarine 
1tbsp.  chopped fresh parsley 

Directions

Cook carrots, covered in lightly salted, boiling water 7 to 9 minutes or until just tender; drain well.
Add vinegar, brown sugar and butter. Cook and stir until well coated.
Sprinkle with parsley.
