Simple Huevos Rancheros

Ingredients

1cup  prepared mild salsa 
1jalapeño chile, seeded and minced** 
1tbsp.  minced fresh cilantro 
1tbsp.  fresh lime juice 
1tbsp.  vegetable oil 
4eggs 
16large tortilla chips 
1/2cup  crumbled queso fresco cheese 

Directions

Preheat oven to 350°F. In bowl, stir together salsa, jalapeno pepper, cilantro and lime juice. Set aside.
Place tortilla chips on cookie sheet. Heat in oven about 5 minutes.
Meanwhile, heat oil in large skillet. Ease eggs into skillet. Fry 3 minutes per side or until yolks and whites are set.
To assemble, arrange 4 tortilla chips in a flower pattern on each of 4 plates. Place 1 egg in center of each. Sprinkle 2 tablespoons cheese over each serving. Top with salsa mixture or serve on the side.
*chill time extra
**Use caution when handling hot peppers. Wear disposable gloves or wash hands thoroughly in hot, soapy water.
