Simple Citrus Scallops

Ingredients

1tsp.  grated orange peel 
1/2cup  orange juice 
1tsp.  grated gingerroot 
2tbsp.  soy sauce 
1clove garlic, minced 
1lb.  sea scallops 

Directions

Stir together peel, juice, ginger, soy sauce and garlic. Pour over scallops. Cover and refrigerate 30 minutes.
Preheat grill to medium-high.
Drain scallops. Thread onto 4 wooden skewers.**
Grill 2 to 2 1/2 minutes. Turn and cook 2 to 2 1/2 minutes longer.
*Marinate time extra
**Soak wooden skewers for at least 30 minutes to prevent burning while grilling.
