Salmon Cheddar Quiche

Ingredients

8 to 9slices bread, crusts trimmed 
1tbsp.  butter, melted 
1 1/2cups  grated Cheddar cheese, divided 
6eggs 
3/4cup  lowfat milk 
1/2tsp.  each salt and pepper 
3/4lb.  salmon, cooked and flaked 
1/4cup  sliced green onions 

Directions

Preheat oven to 350°F. Arrange bread in spiral pattern in buttered 9-inch pie plate, arranging edges to form a crown.
Sprinkle 1/2 cup of the cheese over bread in bottom of pie plate.
Whisk together eggs, milk, salt and pepper until well combined. Fold in salmon, green onion and remaining 1 cup cheese.
Bake 35 to 40 minutes, or until center is set. Check after 15 to 20 minutes.
