Salmon Baked on Cedar Plank

Ingredients

1cedar plank 
1/3cup  freshly sqeezed orange juice 
3tbsp.  lime juice 
1/4cup  rice wine vinegar 
1/4cup  vegetable oil 
1/4cup  soy sauce 
2tbsp.  chopped fresh cilantro 
1tbsp.  peeled, grated gingerroot 
3tbsp.  brown sugar 
1/4tsp.  cayenne pepper 
4(4-oz.)  salmon fillets 

Directions

Cover plank in water and soak 3 to 4 hours; drain. Meanwhile, in small bowl combine orange juice, lime juice, vinegar, oil, soy sauce, cilantro, ginger, brown sugar and cayenne pepper. Pour over salmon in resealable plastic bag; seal and refrigerate 20 minutes.
Preheat oven to 450°F. Place plank on sheet pan lined with parchment paper; place salmon, skin side down, on plank. Bake 15 minutes or until fish flakes with fork.
