Red Onion and Beef Kebabs

Ingredients

18-oz.  container light sour cream 
1tsp.  freshly squeezed lemon juice 
2tbsp.  chopped fresh chives 
1tbsp.  chopped fresh dill weed 
1tsp.  freshly grated lemon peel 
1lb.  flank steak or sirloin steak, cut in 1-inch chunks 
20thin lemon wedges 
1medium red onion, cut in 1-inch chunks 
1/3cup  freshly squeezed lemon juice 
3tbsp.  olive oil 
3cloves garlic, minced 

Directions

Combine sour cream, 1 teaspoon lemon juice, chives, dill and lemon peel in small bowl, stirring well. Cover and refrigerate.
Preheat grill to high. Assemble 5 long skewers,** alternating beef cubes, lemon wedges and red onion pieces on each. Arrange skewers in large, shallow glass dish.
Whisk together 1/3 cup lemon juice, olive oil, garlic and salt and pepper to taste in small bowl. Pour this mixture over skewers, turning to coat. Let stand 5 minutes.
Spray grill with nonstick cooking spray. Place skewers on grill; cover with grill lid. Grill, turning occasionally, 6 to 8 minutes on each side or until meat is cooked to desired doneness. Serve with sour cream mixture.
*Marinate time extra
**If using wooden skewers, soak for at least 30 minutes to prevent burning while grilling.
