Quick Tilapia Veracruz

Ingredients

114.5-oz.  can  diced tomatoes with green chiles 
2tbsp.  sliced pimiento-stuffed green olives 
1tsp.  lemon juice 
1clove garlic, minced 
45-oz.  fresh or thawed tilapia fillets, about 1/2 inch thick 
2tsp.  olive oil 
Hot cooked rice (optional) 

Directions

In a medium bowl stir together undrained tomatoes, olives, lemon juice, and garlic; set aside
Rinse fish; pat dry with paper towels. Season tilapia with pepper
In large skillet heat oil over medium-high heat; add fish. Cook for 3 minutes; turn fish. Pour tomato mixture over fish. Cook for 2 to 5 minutes more or until fish flakes with a fork (145°F) and sauce slightly thickens. Serve with hot cooked rice, if desired
