Quick Pork Stir-Fry

Quick Pork Stir-Fry

Ingredients

1egg white, lightly beaten 
3oz.  diced cooked pork 
1/4cup  diced red bell pepper 
1/4cup  diced onion 
1cup  cooked brown rice 
1/4cup  frozen green peas, thawed 
2tbsp.  low-salt soy sauce 
1tsp.  Thai-style chili sauce 
Sliced green onions (optional) 

Directions

Heat a large skillet or wok coated with nonstick cooking spray over medium-high heat 2 minutes. Add egg white; cook 1 minute, stirring occasionally. Remove and set aside.
Heat nonstick cooking spray in skillet or wok. Add pork; stir-fry 1 to 2 minutes or until golden. Add bell pepper and onion; stir-fry 5 minutes. Add rice, peas, soy sauce and chili sauce; stir-fry 3 to 4 minutes or until thoroughly heated. Stir in reserved egg. Sprinkle with green onions, if desired.
