Coat grill rack with nonstick cooking spray. Preheat grill to medium. Whisk together vinegar, olive oil, mustard, garlic, salt and pepper in small bowl. Pour half of marinade over fish; reserve remainder for later use.
Grill orange roughy, covered with grill lid, 4 to 6 minutes on each side or until fish flakes with fork. Cut into bite-size pieces.
Combine bread, tomatoes, cucumbers, onion, cheese and basil; gently stir in fish. Top with remaining marinade, tossing gently.
