Peppered Orange Roughy

Ingredients

46-oz.  orange roughy fillets (thaw, if frozen) 
1/4cup  reduced-sodium soy sauce 
2tbsp.  fresh lemon juice 
2large cloves garlic, minced 
2tsp.  sugar 
1tsp.  grated gingerroot or 1/4 tsp. ground ginger 
1tbsp.  mixed peppercorns, crushed 
Lemon wedges and parsley sprigs (optional) 

Directions

Place fish in single layer in glass baking dish. Combine soy sauce, lemon juice, garlic, sugar, and ginger; blend well. Pour over fillets; cover and refrigerate at least 30 minutes.
Preheat broiler. Remove fillets from marinade; discard marinade. Sprinkle crushed peppercorns evenly over fish, pressing peppercorns into fish to adhere to surface.
Spray broiler pan with nonstick cooking spray. Arrange fillets on pan. Broil about 5 inches from heat 8 minutes or until fish flakes with fork.
Serve garnished with lemon wedges and parsley, if desired.
