Peppered Beef with Shiitakes

Ingredients

13-lb.  beef tenderloin 
1/2tsp.  salt 
1/2tsp.  pepper 
1/2cup  butter or margarine 
4cups  fresh shiitake mushrooms 
2shallots, finely chopped 
1clove garlic, minced 
1cup  dry red wine 
1cup  beef broth 
1tsp.  Italian seasoning 

Directions

Preheat oven to 450°F. Sprinkle beef evenly with salt and pepper. Place in aluminum foil-lined roasting pan. Bake 15 minutes.
Melt butter in medium saucepan over medium heat. Add mushrooms, shallots and garlic; sauté 5 minutes. Stir in wine, beef broth and Italian seasoning. Reduce heat and simmer, stirring occasionally, 10 minutes or until slightly reduced.
Remove beef from oven and top with sauce. Bake 15 more minutes or until meat thermometer registers 145°F for medium-rare or 160°F for medium. Transfer beef to serving platter, reserving sauce in pan. Let beef stand 10 minutes before slicing. Serve with sauce.
