Party Hummingbird Cake

Party Hummingbird Cake

Ingredients

3cups  all-purpose flour 
1 3/4cups  sugar 
2tsp.  grated orange peel 
1tsp.  baking soda 
1tsp.  ground cinnamon 
1/2tsp.  salt 
2eggs, beaten 
1/2cup  unsweetened applesauce 
3tbsp.  vegetable oil 
1 3/4cups  chopped bananas 
1(8-oz.)  can crushed pineapple in its own juice, undrained 
1 1/2tsp.  vanilla extract 
1/2cup  chopped pecans (optional) 
Orange Glaze (recipe follows) 

Directions

Preheat oven to 325°F. Grease and flour 10-inch fluted tube pan.
In large mixing bowl stir together flour, sugar, peel, soda, cinnamon and salt.
In small bowl stir together eggs, applesauce, oil, bananas, undrained pineapple and vanilla. Stir into dry ingredients in large bowl just until combined; fold in pecans, if desired.
Spread batter into prepared pan. Bake 65 to 70 minutes or until wooden toothpick inserted in center comes out clean.
Cool in pan on wire rack 10 minutes. Remove from pan; let cool completely. Drizzle with Orange Glaze.
Orange Glaze: In small bowl place 2 cups sifted powdered sugar; mix in 2 to 3 tablespoons fresh orange juice until of drizzling consistency.
