Preheat oven to 375°F. Grease ovenproof glass baking dish.
Combine cheese, breadcrumbs, salt, pepper,and thyme on one plate. Combine mustard and oil on second plate. Dip chicken in mustard mixture, then in cheese mixture, shaking off excess. Place chicken, skin side up, in prepared baking dish.
Bake 35 to 40 minutes or until tender and no longer pink (170°F).
