Orange-Jicama Salad

Orange-Jicama Salad

Ingredients

1tbsp.  extra-light olive oil or vegetable oil 
1tsp.  finely grated lime peel 
1tbsp.  lime juice 
1tsp.  brown sugar 
1/2tsp.  bottled fish sauce 
1/2tsp.  finely chopped jalapeño pepper** 
2large oranges 
2cups  peeled and diced jicama 
2tbsp.  chopped cilantro or basil leaves 

Directions

In small bowl, blend oil, lime peel, juice, brown sugar, fish sauce and jalapeño pepper. Set aside.
Peel and section oranges. Add jicama and cilantro or basil to orange pieces. Add dressing mixture; toss to coat. Cover and chill 30 minutes to 1 hour before serving.
*Chill time extra
** Use caution when handling hot peppers. Wear disposable gloves or wash hands thoroughly in hot, soapy water.
