Mexican Meatloaf

Mexican Meatloaf

Ingredients

1lb.  lean ground beef 
1(16-oz.)  can refried beans 
1small onion, finely chopped 
2cloves garlic, minced 
1tsp.  fresh oregano 
1/2tsp.  ground cumin 
1cup  chunky salsa 
1cup  crushed tortilla chips 
1/2cup  sour cream 
1(2.25-oz.)  can sliced olives, drained 
1cup  shredded Mexican-blend cheese 

Directions

Preheat oven to 350°F. In medium bowl combine ground beef, refried beans, onion, garlic, oregano and cumin until well mixed. In shallow baking dish pat half of mixture into 9x5-inch rectangle. Spread with 1/2 cup salsa. Sprinkle with crushed tortilla chips. On piece of wax paper, pat remaining meat mixture into 9x5-inch rectangle. Place on top of chips, lightly pressing together. Spread with 1/2 cup salsa.
Bake 50 minutes or until no pink remains (160°F). Spread top of loaf with sour cream; sprinkle with olives and cheese. Bake 8 to 10 minutes more or until cheese is melted.
