Divide evenly and top 5 tortillas with ham, cheese blend, salsa and cilantro, spreading evenly to within 1 inch of edges. Top with remaining tortillas; press lightly to seal.
Preheat oven to 250°F. Heat 12-inch nonstick skillet over medium heat. Slide 1 tortilla sandwich into skillet and cook until golden on both sides. Keep warm on baking sheet in oven. Repeat with 4 remaining tortilla sandwiches.
Cut warm quesadillas in wedges. Serve immediately topped with sour cream and guacamole.
