Maple Apple and Walnut Oatmeal

Maple Apple and Walnut Oatmeal

Ingredients

1egg white, beaten 
2tbsp.  plus 1 tsp. maple syrup 
2tsp.  dark brown sugar 
1/2tsp.  salt, divided 
2cups  walnut halves 
1tbsp.  unsalted butter 
2medium apples, peeled, cored and thinly sliced 
1/2cup  maple syrup 
1/8tsp.  plus 1/4 tsp. salt 
1/4tsp.  cinnamon 
2cups  old-fashioned rolled oats 
1/2cup  milk (optional) 

Directions

Preheat oven to 300°F. To make candied walnuts, combine egg white, 2 tablespoons plus 1 teaspoon maple syrup, brown sugar and 1/4 teaspoon of the salt in large bowl. Stir in walnuts, tossing to coat. Spread walnuts on aluminum foil-lined baking sheet. Bake 25 minutes or until crisp and lightly browned, stirring once. Remove from oven. Stir walnuts to release from foil; set aside.
Meanwhile, prepare maple-flavored apples. Melt butter in large skillet over medium heat; add apples and sauté 5 minutes, until almost tender. Add maple syrup, 1/8 teaspoon salt and cinnamon. Simmer 5 minutes or until apples are tender.
To prepare oatmeal, combine 3 1/2 cups water and 1/4 teaspoon salt in medium saucepan; bring to boiling. Stir in oats; cook over medium heat 5 minutes or until thickened, stirring frequently.
To serve, ladle oatmeal into 4 bowls. Stir 2 tablespoons milk into each bowl, if desired. Spoon 1/4 of the apple mixture over each serving and sprinkle with 2 tablespoons candied walnuts.
