Lolli's Salmon Cakes with Dipping Sauce

Ingredients

18-oz.  salmon fillet, cooked 
3tbsp.  seafood seasoning 
1tbsp.  dry breadcrumbs 
1egg 
1green onion, chopped 
1clove garlic, minced 
1tbsp.  chopped fresh parsley 
Lemon Dipping Sauce (optional): 
3tbsp.  mayonnaise 
1/2tsp.  grated lemon peel 
1tbsp.  lemon juice 
1/2tsp.  chopped fresh dill (optional) 

Directions

If desired, prepare dipping sauce by combining all ingredients in medium bowl; mix well.
Shape salmon, seasoning, breadcrumbs, egg, green onion, garlic and parsley firmly into 3 patties (scant 1/2 inch thick).
Spray medium nonstick skillet with nonstick olive oil or regular cooking spray. Heat pan over medium heat. Add patties; cook 4 to 5 minutes per side until browned and set. Serve with Lemon Dipping Sauce, coleslaw or tossed salad, if desired.
