Lime Tilapia Croquettes |  |
Ingredients
| 1 | cup
tartar sauce, divided
| | 2 | tbsp.
fresh lime juice
| | 1 | tsp.
grated lime peel
| | 4 | 4-oz.
tilapia fillets (thaw, if frozen)
| | 1/4 | cup
butter or margarine, divided
| | 1 1/4 | cups
breadcrumbs
| | 1 | egg, lightly beaten
| | 1 | large clove garlic, minced
| | 2 | tsp.
lemon pepper
| | Coleslaw (optional)

Directions
 | Stir together tartar sauce, lime juice and lime peel. |  | Coat large nonstick skillet with 2 tablespoons of the butter. Cook fillets 5 minutes on each side or until fish flakes with a fork. Flake fish fillets and place in large bowl. Add 1/3 cup of the tartar sauce mixture, breadcrumbs, egg, garlic and lemon pepper, stirring gently to combine ingredients. Shape into 6 patties. |  | Cook patties in batches in remaining 2 tablespoons butter over medium-high heat 5 minutes on each side or until golden brown. Serve immediately with remaining tartar sauce mixture and coleslaw, if desired. |
