Lemon-Herb Tabbouleh

Ingredients

1cup  uncooked bulgur or cracked wheat 
1 1/2cups  diced tomato 
1cup  diced, seeded cucumber 
1/2cup  sliced green onions 
1/4cup  chopped parsley 
1tsp.  dried mint 
1/2tsp.  salt 
1/3cup  fresh lemon juice 
1tbsp.olive  oil 

Directions

In large bowl combine bulgur and 1 cup boiling water. Cover and let stand 30 minutes or until water is absorbed. Add remaining ingredients; blend well. Cover and chill for 2 hours
