Latin-Style Garbanzo Beans & Sausage

Ingredients

3tbsp.  olive oil 
2large ripe tomatoes, cubed 
4cloves garlic, minced 
1bay leaf 
215-oz.  cans garbanzo beans (chickpeas), rinsed and drained 
3/4cup  chicken broth 
1lb.  pork sausage, cut into 1-inch slices 

Directions

Heat oil in large, heavy saucepan over medium heat. Add tomatoes and garlic; cook about 10 minutes, stirring occasionally. Add bay leaf, garbanzos, chicken broth and sausage. Reduce heat to medium-low. Cover pan; simmer about 20 minutes until sausage is no longer pink. Add salt and pepper to taste.
Using the back of a spoon, mash some of the garbanzos against sides of saucepan to thicken stew. Remove and discard bay leaf.
