Latin-Style Garbanzo Beans & Sausage |  |
Ingredients
| 3 | tbsp.
olive oil
| | 2 | large ripe tomatoes, cubed
| | 4 | cloves garlic, minced
| | 1 | bay leaf
| | 2 | 15-oz.
cans garbanzo beans (chickpeas), rinsed and drained
| | 3/4 | cup
chicken broth
| | 1 | lb.
pork sausage, cut into 1-inch slices

Directions
 | Heat oil in large, heavy saucepan over medium heat. Add tomatoes and garlic; cook about 10 minutes, stirring occasionally. Add bay leaf, garbanzos, chicken broth and sausage. Reduce heat to medium-low. Cover pan; simmer about 20 minutes until sausage is no longer pink. Add salt and pepper to taste. |  | Using the back of a spoon, mash some of the garbanzos against sides of saucepan to thicken stew. Remove and discard bay leaf. |
