Ingredients

2ripe papayas 
2jalapeño peppers, seeded and finely chopped** 
1cucumber, peeled and chopped 
1/2cup  finely chopped red onion 
1/2cup  chopped fresh cilantro 
1large clove garlic, minced 
1tbsp.  grated lime peel 
1/2cup  fresh lime juice 
Fresh cilantro (optional) 
Grilled fish or chicken (optional) 

Directions

Peel papayas. Discard seeds and cut into 1/2-inch cubes. Place in bowl.
Add jalapeño peppers, cucumber, onion, cilantro, garlic, lime peel and juice to papayas. Lightly toss to mix. Garnish with fresh cilantro, if desired. Serve as a condiment for grilled fish or chicken, if desired.
*chill time extra
**Use caution when handling hot peppers. Wear disposable gloves or wash hands thoroughly in hot, soapy water.
