Herbed Bone-In Pork Roast

Ingredients

13- to 4-lb.  pork loin roast 
1large onion, sliced 
11-lb.  bag baby carrots 
3garlic cloves, minced 
2tsp.  chopped fresh sage 
1tsp.  chopped fresh rosemary 
2tsp.  kosher salt 
1/2tsp.  lemon pepper seasoning 
Chopped fresh sage (optional) 

Directions

Preheat oven to 325°F. Place pork roast in shallow pan. Place sliced onion and carrots around roast; rub garlic, sage, rosemary, salt and seasonings into roast and sprinkle over vegetables.
Cover tightly with foil. Bake 1 3/4 to 2 1/2 hours or until instant read thermometer inserted in center of meat registers 160°F. Let rest 10 minutes before slicing. Garnish with fresh chopped sage, if desired.
