Hearty Vegetable Beef Stew

Ingredients

1 1/2lb.  beef stew meat 
5tbsp.  flour, divided 
3tbsp.  vegetable oil 
2cloves garlic, minced 
4cups  beef broth 
1/4cup  tomato paste 
1yellow onion, chopped 
1/216-oz.  pkg. baby carrots 
14-oz.  pkg. fresh shiitake mushrooms 
2tbsp.  chopped fresh thyme 

Directions

Toss beef cubes with flour. Season to taste with salt and pepper.
Heat oil over medium heat in Dutch oven. Add meat and brown on all sides; drain off fat. Add garlic, broth and tomato paste. Bring to boiling; cover and simmer 1 to 1 1/2 hours.
Add onion, carrots, mushrooms and thyme; season to taste with additional salt and pepper. Cover and simmer 30 minutes or until vegetables are tender.
