Grilled Mahi Mahi with Tomatoes and White Beans

Grilled Mahi Mahi with Tomatoes and White Beans

Ingredients

1/4cup  lime juice 
3tbsp.  olive oil, divided 
3tbsp.  chopped shallots, divided 
1/2tsp.  salt 
1/2tsp.  freshly ground pepper 
46-oz.  mahi mahi fillets (thawed, if frozen) 
114.5-oz.  can diced tomatoes 
111-oz.  can corn, drained 
115-oz.  can cannellini or white beans, drained and rinsed 
1/4cup  freshly chopped basil 

Directions

Combine lime juice, 2 tablespoons of the olive oil, 2 tablespoons of the shallots, salt and pepper in small bowl. Drizzle over fish.
Coat grill rack with nonstick cooking spray. Preheat grill to medium-high. Grill fish, covered with grill lid, 4 to 6 minutes or until fish flakes with fork.
Sauté remaining 1 tablespoon of the shallots in remaining 1 tablespoon hot oil in large sauté pan over medium-high heat. Add tomatoes and bring to boiling. Add corn and beans; reduce heat and simmer 10 minutes or until heated through. Stir in basil and cook 1 minute more. Serve fish on top of sauce.
