Sauté pancetta in large skillet until fat separates out. Remove slices from pan. Reserve 2 tablespoons fat drippings. Place and reheat 1 tablespoon drippings in skillet. Add onion and sauté until tender.
Arrange pancetta on 2 bread slices. Top with onions. Sprinkle 2 tablespoons Gorgonzola cheese over each sandwich. Top with second bread slice. Heat remaining 1 tablespoon drippings in skillet. Fry sandwiches 3 to 5 minutes per side or until golden. Cut each sandwich in half to serve.
