Preheat oven to 400°F. Unroll pizza crust and arrange on baking sheet lined with parchment paper. Form into 10x12-inch rectangle. Bake 8 minutes.
Meanwhile heat oil in large skillet. Add onion and sauté 5 minutes or until tender.
Remove crust from oven, leaving oven on. Spread crust with onion. Spread 1 cup goat cheese over onion. Sprinkle on tomatoes.
Bake 6 to 8 minutes or until crust is golden. Remove from oven. Spread arugula and remaining 1/2 cup goat cheese over pizza. Return to oven 1 minute or until arugula is limp and cheese is soft. Let stand 5 minutes before serving.
