Goat Cheese and Onion Focaccia

Ingredients

11-lb.  loaf frozen bread dough, thawed according to package directions 
1tbsp.  olive oil 
1medium red onion, thinly sliced 
1/4tsp.  black pepper 
1/4tsp.  crushed dried oregano 
1/4tsp.  crushed red pepper flakes 
1medium tomato, cored and chopped 
1tbsp.  capers 
2tbsp.  sliced ripe olives 
1cup  crumbled chèvre cheese or goat cheese 

Directions

Preheat oven to 400°F. Roll out dough to 8-by-12-inch rectangle. Place on greased baking sheet.
Heat oil in medium skillet over medium-high heat. Add onion, pepper, oregano and red pepper flakes; cook and stir 5 minutes. Spread onion mixture over bread dough. Sprinkle on chopped tomato, capers, olives and cheese.
Bake 15 to 18 minutes or until bread is puffed and golden.
