Gluten-Free Cinnamon Bread

Ingredients

1/4cup  vegetable oil 
1/4cup  brown sugar, packed 
1large egg 
1 1/4cup  brown rice flour 
1/2tsp.  baking soda 
1/2tsp.  baking powder 
1tsp.  ground cinnamon 
1/2cup  raisins, hydrated in hot water for 10 minutes 
1/2cup  milk 
1/4cup  applesacue 
1/2cup  finely chopped pecans (optional) 

Directions

Preheat oven to 350°F. Lightly grease 9x5x3-inch bread pan; set aside.
In a medium bowl, mix oil and sugar together with a wooden spoon. Mix in egg.
Add flour, baking soda, baking powder and cinnamon. Stir to incorporate, being careful not to overmix. Add raisins, milk, applesauce and finely chopped pecans, if desired.
Pour mixture into prepared bread pan and bake 35-40 minutes. Cool in bread pan before removing.
