Glazed Celery, Carrots and Apples

Ingredients

4stalks celery, chopped 
8oz.  baby carrots 
2tsp.  olive oil 
2Granny Smith apples, cored and chopped 
1cup  golden raisins 
3/4cup  apple juice 
3tbsp.  honey 
1tbsp.  Dijon-style mustard 

Directions

Cook celery and carrots in oil over medium heat 8 to 10 minutes or until vegetables are crisp-tender.
Add apples, raisins, apple juice, honey and mustard; stir well. Cover, reduce heat to medium and cook 10 minutes. Uncover and cook until liquid is absorbed and vegetables are glazed.
