Fresh Salad with Citrus Vinaigrette

Ingredients

1/3cup  fresh tangerine juice 
2tbsp.  balsamic vinegar 
2tbsp.  honey 
1clove garlic, minced 
1/2tsp.  salt 
1/2tsp.  freshly ground pepper 
1/2cup  olive oil 
6cups  mixed salad greens 
2small tangerines, peeled, seeded and sectioned 
1/2small red onion, sliced 
1/4cup  toasted almonds or pecans 
4slices prosciutto (optional) 

Directions

For dressing, blend tangerine juice, balsamic vinegar, honey, garlic, salt and pepper until smooth. With blender running, add olive oil in slow, steady stream until combined.
Divide greens among 6 salad plates. Arrange tangerine sections and onion slices on greens. Top with almonds and drizzle with dressing. Top evenly with prosciutto, if desired.
