Fresh Orange Roughy Quesadillas

Fresh Orange Roughy Quesadillas

Ingredients

1/4tsp.  salt 
1/4tsp.  pepper 
24- to 6-oz.  orange roughy fillets 
3tbsp.  olive oil, divided 
2cups  shredded Monterey Jack cheese (8 oz.) 
610-inch  flour tortillas 
Salsa (optional) 
Light sour cream (optional) 

Directions

Sprinkle salt and pepper evenly over fillets. Cook fish in 1 tablespoon of the hot oil in nonstick skillet over medium-high heat 5 minutes on each side, or until fish flakes with a fork. Flake fish and set aside.
Sprinkle cheese evenly over 3 tortillas; top with flaked fish. Cover evenly with remaining 3 tortillas.
Cook quesadillas, 1 at a time, in remaining 2 tablespoons oil in nonstick skillet over medium-high heat 3 to 5 minutes on each side or until golden. Cut into wedges and serve with salsa and sour cream, if desired.
