Sprinkle cheese evenly over 3 tortillas; top with flaked fish. Cover evenly with remaining 3 tortillas.
Cook quesadillas, 1 at a time, in remaining 2 tablespoons oil in nonstick skillet over medium-high heat 3 to 5 minutes on each side or until golden. Cut into wedges and serve with salsa and sour cream, if desired.
