Fresh Citrus Salad with Champagne Vinaigrette

Ingredients

Champagne Vinaigrette: 
1/2cup  champagne vinegar 
2tsp.  Dijon-style mustard 
1/4tsp.  salt 
1/4tsp.  pepper 
1/3cup  olive oil 
Salad: 
2heads  red-leaf lettuce, torn into bite-size pieces 
1head  Belgian endive or radicchio, sliced 
2navel oranges, peeled and sectioned 
2pink grapefruit, peeled and sectioned 
1/2cup  small red onion, halved and thinly sliced 
1/2cup  whole blanched almonds, toasted 
1/4 to 1/2cup  crumbled Roquefort cheese, chilled 

Directions

To prepare Champagne Vinaigrette whisk together vinegar, mustard, salt and pepper in small bowl.
Add oil in a slow, steady stream, whisking constantly, until blended; set aside.
To prepare salad place lettuce and endive on chilled serving platter. Top with orange and grapefruit sections, onion, almonds and cheese.
Serve immediately with Champagne Vinaigrette.
