Dressed Country Brown Rice

Dressed Country Brown Rice

Ingredients

1cup  brown rice 
3cups  sliced mushrooms 
4oz.  bulk pork sausage or turkey sausage 
1cup  chopped onion 
3/4cup  shredded carrot 
1/2cup  dried cranberries or tart cherries 
1/4cup  chopped fresh parsley 
2tbsp.  chopped fresh basil 

Directions

In medium saucepan simmer rice and 2 cups water, covered, 45 minutes or until tender. Meanwhile, in large skillet cook mushrooms, sausage and onion until meat is brown and vegetables are tender. Drain off any fat. Stir in carrot, cranberries, parsley and basil.
Stir cooked rice into sausage mixture. Season with salt and pepper to taste. Cook and stir until heated through. Serve with roast turkey, pork or beef.
